Competing Proteins: Seasonal Factors in Play, Majority of Markets Lowered Last Week

The beef cutout, which represents a composite value of the carcass based upon prices paid for primal cuts, was lower as anticipated last week. The Choice cutout fell 1.52% while Select was down 1.43%. Much of this was due to seasonal weakening following the bulk of Labor Day buying.
The pork complex was in a similar position last week, with the cutout falling 1.9%, brought down mostly by a depreciation in belly and loin values. The upcoming holiday is lending support for few items, while needs have already been filled for others, leading to discounting.
