Market prices for caviar have been under considerable pressure ever since 2005, when the US government banned the importation of Beluga caviar, a prized sturgeon roe that’s been overfished to the point of endangered status.
In response to this, sturgeon farms have begun popping-up in the US, and while the industry is still in its infancy, it’s introduced additional product to the market fulfilling some of the demand and placing a check on runaway pricing.
