Restaurants as Partners in Sustainability: Promoting Sablefish At Home
Eat on the Wild Side (EOWS), a non-profit established by Seattle-based Fishing Vessel Owners’ Association and the Deep Sea Fishermen’s Union, is one of the 40 potential recipients of the 2023 Saltonstall-Kennedy Grant Program.
Their proposal would expand the domestic market and consumption of North Pacific sablefish, also called black cod. Sablefish is highly sought after in Japan for its rich flavor and buttery texture. It is also one of the most sustainably managed fish and has been abundantly available in recent years.
