Wheat-based food producer Loryma introduced a new vegan fish concept that features wheat ingredients that replicate the muscle meat of fish, and provide a typical mouth feel.
By using a modular principle, the company could enable a range of applications such as vegan fried fish or fish fillets, and meet consumer demand for sustainable, plant-based alternatives.
